Ear training or aural skill, has been a part of my education. In my teaching method, I play intervals for students on piano or keyboard and they are required to realize those intervals. Also, when I play chords, they have to find out the quality of each chord, in terms of major, minor, seventh chord and so on. An important part of ear training is dictation. Through my studies at school, I have undergone extensive ear training over the course of many years. I have utilized what I have learned in the real world as an orchestrator, where often times a composer will only hum a tune over the phone and I would then have to produce a completely orchestrated segment based on the hummed tune. All my life I've been able to hear a piece of music and be able to play it back with proficiency.
